Ingredients
7 items- 4 whole wheat tortillas
- 2 avocado, mashed
- 1 cucumber, thinly sliced
- 1/2 cup shredded carrot
- 1 cup baby spinach leaves
- 1 tbsp lemon juice
- to taste salt
Instructions
Mash the avocado with lemon juice and a pinch of salt.
Spread the mashed avocado evenly over each tortilla.
Layer cucumber slices, shredded carrot, and spinach leaves on top.
Roll each tortilla up tightly and slice crosswise into pinwheels.
Serve immediately or chill briefly before serving.
