  • 1 can (15 oz) canned chickpeas, drainedpantry staple
  • 2 tbsp tahinipantry staple
  • 2 tbsp olive oilpantry staple
  • 2 tbsp lemon juice
  • 1 garlic clove
  • 1/2 tsp ground cuminpantry staple
  • 1 cup carrot sticks
  • 1 cup cucumber sticks
  • 1 cup bell pepper strips (assorted colors)

Instructions

  1. Add the chickpeas, tahini, olive oil, lemon juice, garlic, and cumin to a food processor.

  2. Blend until smooth, adding a splash of water if the hummus is too thick.

  3. Taste and adjust salt and lemon juice as needed.

  4. Spoon the hummus into a bowl and arrange the carrot, cucumber, and bell pepper strips around it in rainbow order.

  5. Serve immediately, or refrigerate up to 3 days.
