
Rainbow Hummus Dippers

Ingredients
9 itemsPantry-friendly- 1 can (15 oz) canned chickpeas, drainedpantry staple
- 2 tbsp tahinipantry staple
- 2 tbsp olive oilpantry staple
- 2 tbsp lemon juice
- 1 garlic clove
- 1/2 tsp ground cuminpantry staple
- 1 cup carrot sticks
- 1 cup cucumber sticks
- 1 cup bell pepper strips (assorted colors)
Instructions
Add the chickpeas, tahini, olive oil, lemon juice, garlic, and cumin to a food processor.
Blend until smooth, adding a splash of water if the hummus is too thick.
Taste and adjust salt and lemon juice as needed.
Spoon the hummus into a bowl and arrange the carrot, cucumber, and bell pepper strips around it in rainbow order.
Serve immediately, or refrigerate up to 3 days.
