Ingredients

  • 1 lb cooked shrimp, peeled and deveined
  • 4 cups cooked rice, cold
  • 2 eggs, beaten
  • 1 cup frozen peas and carrots
  • 2 stalks green onion, sliced
  • 3 tbsp soy sauce
  • 2 cloves garlic, minced
  • 2 tbsp vegetable oil

Instructions

  1. Heat 1 tablespoon of the oil in a large skillet or wok over medium-high heat. Scramble the eggs until just set, then remove and set aside.

  2. Add the remaining oil to the skillet and stir-fry the shrimp with the garlic until pink and opaque, about 3 minutes.

  3. Add the rice and peas and carrots, breaking up any clumps, and stir-fry for 3-4 minutes.

  4. Stir in the soy sauce and fold in the scrambled eggs and green onion.

  5. Cook for another minute until everything is heated through, then serve hot.
