
Shrimp Fried Rice

Ingredients
8 items- 1 lb cooked shrimp, peeled and deveined
- 4 cups cooked rice, cold
- 2 eggs, beaten
- 1 cup frozen peas and carrots
- 2 stalks green onion, sliced
- 3 tbsp soy sauce
- 2 cloves garlic, minced
- 2 tbsp vegetable oil
Instructions
Heat 1 tablespoon of the oil in a large skillet or wok over medium-high heat. Scramble the eggs until just set, then remove and set aside.
Add the remaining oil to the skillet and stir-fry the shrimp with the garlic until pink and opaque, about 3 minutes.
Add the rice and peas and carrots, breaking up any clumps, and stir-fry for 3-4 minutes.
Stir in the soy sauce and fold in the scrambled eggs and green onion.
Cook for another minute until everything is heated through, then serve hot.
