Ingredients

  • 2 cans (5 oz each) canned tuna, drainedpantry staple
  • 1/3 cup mayonnaise
  • 1/2 cup celery, finely diced
  • 1 tbsp lemon juice
  • to taste salt and black pepperpantry staple
  • 8 slices whole wheat bread
  • 4 lettuce leaves

Instructions

  1. In a medium bowl, flake the drained tuna with a fork.

  2. Stir in the mayonnaise, diced celery, lemon juice, salt, and pepper until well combined.

  3. Toast the bread if desired, then spread the tuna salad evenly over 4 slices.

  4. Top with a lettuce leaf and the remaining bread slices, then cut each sandwich in half.

  5. Serve right away, or chill the tuna salad for up to 2 days before assembling sandwiches.
